Before, I used to love cooking, but as I said it takes time and effort, so I do it very rarely. However, for me baking it’s a perfect activity to clear my mind. Lately, I had some misfortune events going on, so I thought baking my fav cookies will make me think less. So, yesterday’s night I remembered that my cleaning lady is coming the next day so I quickly run to the shop to get the ingredients, so I could bake the cookies and make all the mess BEFORE she comes. Unfortunately, I got most of the things I needed, except one very important ingredient- dulce de leche (caramel). I thought of doing it myself from condensed milk but the guy in Green Valley did not understand me quite right and gave me some jar saying that in Bangladesh they make caramel from that (but I guess we had just a misunderstanding- otherwise I love Green Valley). No worries, the next day I got readymade caramel from the food section in Harvey Nicholas (5th floor). So basically the cookies origin is from Argentina. These super yummy cookies are quite airy and they are the ultimate diet breaker, so be aware :)
You will need:
250 grams cornflour
200 grams white flour
0.5 soda powder
2 teaspoons of baking powder
100 grams butter in room temperature
125 grams margarine in room temperature
150 grams white sugar
3 yolks
3 tablespoons of cognac or brandy
1 teaspoon vanilla extract
1 lemon peal grated
Dulce de leche
100 grams coconut flake

The Steps: Dough: 1.
1. Sift the cornflour, white flour, sugar, soda and baking powder and set aside. 2. 2. Beat in a mixer the butter with the margarine and sugar until you get an airy mix. Add the yolks one by one and keep on mixing while adding the cognac, vanilla extracts and the lemon peel. | | | | | | | | | | | | | | | |

3. In a low speed mix inside the wet mix the dry ingredients until you get the dough (I usually finishing the dough by mixing it by hand. Once ready put into the fridge for 40 min. 4. Heat the oven to 175c degrees. 5. Prepare a baking pan with baking sheets. 6. Beat flat the dough into 3/4cm thickness and use a cookie cutter or a cognac glass to cut circles. | |

7. Bake for 8-10 min until the circles are goldy. Close the heat and let it stay in the oven for 5 min and take the cookies out to cool. |

8. Once cooled prepare a “sandwich” from 2 pieces of cookies with the caramel sauce in the middle. Put some sauce on the side of the “cookie sandwich” and circle into the coconut flakes. 9. Enjoy |
