Alton's recipe for a great day of thanks bird includes a brine, which is a mix of vegetable broth, brown sugar, black peppercorns, allspice berries, and candied ginger, and then roasting it. You've got to plan ahead and thaw the turkey and brine a day before you serve it, so start prepping now!

The target brine time for the turkey is 12 hours, flipping once halfway through. Then the turkey cooks for about 2 and a half hours, until it's ready to be carved and enjoyed, after it rests for 15 minutes, of course!
