Good question. Mother nature deisgned it so that calves would be born in the Spring. Just when things start to warm up outside. When the cow gives birth to a calf she produces milk to feed the calf. If the calf does not feed from the mother she stops producing milk. The cows milk production decreases over timer whether or not the calf feeds. This is why dairy cows are breed over an over. This maximizes milk production. This means that sometimes calves are born in the Winter rather than the Spring. They are biologically designed to be born in warm weather not cold.
