Sturdy medium-weight aluminum pans with a dull surface are best for baking cakes and tortes.

Avoid stainless steel pans because they do not conduct heat evenly. Heavy dark metal and glass pans should also be avoided since they hold more heat and can lead to heavy and dark crusts.
