This Mexican rice casserole makes a hearty, one-dish meal, complete with protein, vegetables and lots of great flavor. I use Trader Joe's frozen pre-cooked pork for this recipe, but leftover pork chops will work well. Or, for a vegetarian version, just leave out the meat altogether.
