1 whole chicken (cut into eighths)
1 whole garlic (chopped)
olive oil or vegetable / corn oil
1 teaspoon ground black pepper
4 cloves black peppercorns
3 dried bay leaves
1 cup soy sauce
1 cup of vinegar
7-Up or Sprite (optional)
1 whole lemon (cut in 4) (optional)
Remember to wash your chicken very well. We recommend using the lemon (in ingredients) to scrub all over the chicken pieces and rub some 'of salt in it as well.

Heat oil and add all the garlic, and cook until the garlic is lightly browned. Add chicken and fry until the chicken is beginning to tender.

Add ground black pepper, whole cloves black pepper, bay leaves, soy sauce and vinegar, and simmer for 25-35 minutes or until chicken is done.

Taste and adjust to your liking (it should be a little 'hot). When the chicken is tender, add a little '7-Up Sprite or if you prefer a sweeter taste, and simmer for another 5 minutes.

Serve over rice.
