Cookie Mixes in the Refrigerator

I usually cut cookie recipes down to just enough for one sheet of cookies.
This keeps Tim and me happy for several days without having so many cookies around that we eat too many lest they go stale.
Yes, I could make dozens of cookies and freeze some. But I like the whole baking process, and doing it this way lets me bake two or three times a week as I'm fixing dinner. Watching one sheet of cookies in the oven and taking it out just before dinner is fun. Baking several sheets in a row feels like too much time and trouble.
What I do for efficiency is to measure out the dry ingredients for three batches at once. I keep the spares in the refrigerator so that it's almost brainless to come home from work and throw a batch of something sweet together.
