Cooking 101-1


This blog is dedicated to my mom because without her, I would not know half the things I know. I remember I used to ask her for the same recipes at Christmas time, and she would say I gave you that recipe last year what did you do with it. I always wrote them down but always lost them. Then one year, I asked her again, and she said you better write it down cause I might not be here next year. The next year I lost the recipes again and got ready to call her but forgot that she had passed away. Boy did I feel bad. But I remembered alot and I still use those recipes at holiday time. So basically what I'm trying to say is, write down those recipes that you love so well cause, you never know when she might be gone.
As you know, my main focus is on teenage girls and single young women. But, if your single, dating, or living with a "mama's boy" you must cook like his mama. There are so many quick meals especially when your on the run. So today, we are gonna talk about rice. So many people use the quick rice because they don't know how to cook regular rice and that's OK to each his own. Rice is a 2-1 ratio so, if you use one cup of rice you use two cups of water. And you can use chicken stock to give the rice more flavor. If you use two cups of rice it will be four cups of water. and you will cook the rice for about 15 minutes covered. Also we should think of the things our moms cooked that kept the family going and a full stomach. Beans, greens, corn bread and how about some baked turkey wings with dressing. With unemployment the way it is, we must try to get the most for our dollar. So lets move on to some red beans you don't have to buy the dry beans you can buy the red beans in a can. So here we go.
Red Beans:
2 (12-ounce) cans red beans, drained and rinsed3 cups of chicken stock2 bay leaves1 Tablespoon Vegetable oil2 ribs of celery and 1 green pepper chopped2 cloves of garlic minced1/2 pound smoked sausage cut in slices1 teaspoon dried thymeSaute the onion, celery, green pepper and garlic until tender then add the smoke sausage about 5 minutes. Then add the beans, chicken stock and bay leaves and let simmer for 1 1/2 hours adding water if needed don't forget to add salt and pepper to taste. Serve the beans over the rice.
