Rating :5/5 The Cookie Book I Really Use... by Lemon-Ginger Jenn 2009-10-19
I have two additional cookie books written by Camilla, and love them. I have many cookie cookbooks and lots of general baking cookbooks written by the best in the business, but.... time and time again, Camilla's books are the ones I use. So far, her new book, Shortcut Cookies, exceeds my expectations.
Over the past weeks I've made a bunch of the cookies. The following are my favorites:
Aztec Brownies - just amazing. Hints of heat, perfect texture, amazing balance of flavors.
Pumpkin Whoopies with Cinnamon Fluff Frosting. These are fantastic cookies to bring to a bake sale or to a potluck because nobody else will bring them and everybody wants one.
Mother Lode Chocolate Toffee Caramel Bars - The name pretty much says it all. These are divine, and positively addictive.
Fresh Raspberry Cheesecake Bars (made with a brownie mix base) - these beat out my cheesecake as my boyfriend's all-time favorite dessert.
I want to emphasize that the "shortcuts" here extend far beyond using mixes, ready-made dough. Camilla offers countless "shortcuts" for baking that have extended into all of my baking time. I love the method she offers for lining bar cookie pans with foil. Genius. So easy to get the bars out, almost no clean-up as a bonus. I also love her method for softening butter quickly (grate it--brilliant!). In all, the front end is one of the best of the cookie books on my shelf.
The photos may be limited, but they are inspirational, and there are great headnotes to all of the recipes. This book will entice even novice bakers to make adventurous cookies of all varieties.
Rating :5/5 Beautiful, Delicious, & EASY! by Marin Kennedy 2009-09-14
I love the whole concept of this book - a one-source collection of Camilla's best quick & easy cookie recipes. There is a great variety of cookies and bars, a smart and friendly intro (cookies 101#, and the instructions are clear and easy to follow. Of the 10 recipes I have tried so far, I've been very happy with 3, and thrilled with the remaining 7 #my #1 is the raspberry swirl sour cream bars made with cake mix). Best yet: EASY! I made 10 dozen cookies for a back-to-school bake sale--made them all in a couple of hours. And...everyone was asking for the recipes, I cannot say enough good things about the book.
Rating :5/5 A Must-Have! by Christina Weinstein 2009-09-05
I love to bake, particularly cookies, of every variety. I purchased Camilla's Cake Mix Cookies book a few years ago, and it's dog-eared, stained (with chocolate!), and pretty much falling apart now because I've made her cookies again and again. That's what encouraged me to purchase this book and I'm so glad I did. I am a huge fan of her work, and love all of her appearances on the Food Network. She even included her $25,000 winning spice cookie from the Ultimate Recipe Showdown at the front of the book (you have to make them; you'll understand why a spice cookie won!)
I now have cookie recipes to last a lifetime and all the options--from classics to contemporary flavor ideas I had never dreamed of (like the Turkish Coffee Brownie Bars--OMG!!! They are so easy and beyond scrumptious)--make my head spin. Her flavor combinations are genius, and the recipes so easy to follow.
Every recipe I have tried so far has been top notch and unbelievably delicious. I was happy to find some new cake mix recipes thoughout--the Italian Meltaways and Maple Walnut Crisps were demolished in seconds by my office staff.
As always, Camilla has stellar tips for making cookie-baking perfect. I am so happy that this book has beautiful photos, the only thing that was missing from Camilla's earlier books.
