OK I tried saving the yeast from my last batches and now have three in the fridge. I pulled one out to make a starter for a new boil and I find a whitish layer on top and what appears to be a small white mold cluster. This may be a dumb Q but is it bad or can I skim it off and still use it...

I have been brewing some batches of cider. I let them ferment for two weeks, but the fermentation went to far and the cider is now very bitter and has a specific gravity of about 1.000. Is there anything I can do to try and reverse the process or even just make the brew taste better? Any help...
