Bagara Baingan is a famous Hyderabadi dish.I followed the recipe from vahrevah.com .This dish tasted excellent and goes well with hyderabadi biriyani,roti,naan. I have seen n made many potato fry gone smashy at end...To avoid it,my mom dont cook it and she finely cut the potatoes into pieces and roast them, like this ..I cook my potatoes in pressure cooker (half cooked) and peel the skin and cut them into med. pieces and toss them well in oil before adding my spices...
