Sugar.org put out the following description of Maltodextrin: What is maltodextrin? A maltodextrin is a short chain of molecularly linked dextrose (glucose) molecules, and is manufactured by regulating the hydrolysis of starch. Typical commercial maltodextrins contain as few as three and as many as nineteen linked dextrose units. While the singular term “maltodextrin” is permitted in an ingredient statement, the term “maltodextrin” can be applied to any starch hydrolysis product that contains fewer than 20 dextrose (glucose) units linked together. This means that the term “maltodextrin” stands for a family of products, not a single distinct ingredient. Additionally, today’s commercially important maltodextrin products are ... Read Full Story

Gluten Free Living put out the following statement about Maltodextrin: Maltodextrin Maltodextrin is gluten free. It can be made from a variety of starches, including corn, potato, rice or wheat. However the source does not matter because maltodextrin is such a highly processed ingredient that the protein is removed, rendering it gluten free. If wheat is used to make maltodextrin, "wheat" will be appear on the label. Even in this case, the maltodextrin would be gluten free. Read Full Story

Maltodextrin does not contain nutritionally significant or taste-significant quantities of MSG or free glutamate. In the US, maltodextrin as a food additive must be certified gluten-free to a certain tolerance, and that means glutamate-free due to the process. If a processor leaves the gluten in their grain malt (the only way for MSG to enter the mix), the hydrolyzing creates amino acids(including glutamate) in trace quanitities. Rumor among those suspicious of food additives erroneously claims that maltodextrin "is MSG", or claims that maltodextrin contains enough MSG to trigger reactions in some people, though no medical evidence or opinion has been presented to support this assertion.

snippet(document); Nutrex Research Inc. has developed VOLU-GRO ™, which uses 60 grams of a very unique and ultra high-molecular weight carbohydrate called Long Chain Waxy Maize Starch per serving to accelerate creatine transport. Waxy Maize Starch is equally as potent in stimulating insulin as dextrose and maltodextrin, yet unlike these two sugars, Waxy Maize Starch is completely sugar free. Waxy Maize Starch passes through the stomach...
