My new friend Jan over at Jan’s Sushi Bar had a post a few days ago with a recipe for Pad Thai . I love Pad Thai. I’ve been known to eat lunch in the Fremont neighborhood of Seattle, where, I kid you not, there are seven Thai restaurants. Have you tried any of the ready made noodles from Trader Joe's that come in those cute little "take out" containers?  I'm guessing that most of you have seen them, but like me, haven't necessarily tried them.  I think I've tried nearly everything at Trader Joe's, but I hadn't tried this line of ready-to-go noodles until one of our contest winners used it. Pad Thai (or Phad Thai, Thai: ??????, IPA: [p?àt t??j], “Thai style frying”) is a dish of stir-fried rice noodles with eggs, fish sauce plus any combination of bean sprouts, shrimp, chicken, or tofu, garnished with crushed peanuts and coriander. It is normally served with a piece of lime, the juice of which can be added along with Thai condiments. Have you tried Potato Chip Baked Chicken? I’ve been wanting to make it for a long time now – So I reviewed a few recipes and finally made these Potato Chip Baked Chicken Strips .
