Pumpkin Muffins
For more pumpkin goodness, try this recipe for pumpkin muffins. They're even better with some whipped cream cheese frosting on top!
1 15 ounce can of solid-pack pumpkin
3 eggs
1/2 cup vegetable oil
2 tsp. ground cinnamon
1 tsp. baking soda
1 18 ounce package of yellow cake mix
Whipped cream cheese, if desired
Combine pumpkin, oil, eggs, baking soda, and cinnamon. Add in the cake mix and beat till combined, for about 2 minutes.
Use paper cupcake liners in muffin or cupcake pan and fill 2/3 with the batter. Bake at 350 degrees for about 15 to 17 minutes or till toothpick comes out clean. Let sit for 5 minutes then remove from pan to cool. Then spread frosting if desired.
