Feeding a family of six is getting a little tight. The main reason for this is the meat factor. Meat is outragously expensive. To help curb some of the cost I have decided to make 4 vegetarian meals a week.
Here are some really cool recipes I’ve found.

Bell Pepper Extravaganza:
You can make this with pasta or basmati rice.
Prep Time 15 min
Cooking Time: 10 Min
Serves 4-6
1/4 c EVOO
8 Medium bell peppers of all colors (yum)
6 medium garlic cloves, minced
1/2 c fresh parsley, chopped
3 tblspn lemon juice
1 1/2 tspns salt
1/4 tspn black pepper
Cut peppers into strips. Heat oil over medium heat and add sautee the peppers about 10 min. Add spices. Your done. This seems like a great meal for these hot steamy days! Nice and light.
Thai Noodle Salad
Prep Time: 15 min
Cooking Time: 10 min
Serves: 8-10
The Salad
1 lb sesame noodles
1 large red bell pepper, diced
1 large green bell pepper, diced
2 ribs celery, chopped
1 bunch cilantro, chopped
2 cups whole roasted peanuts
1 large carrot, grated
The Dressing
1/2 c tamari
1/2 c sesame oil
1/2 c peanut butter
1/3 cup brown sugar
2 tspn crushed red pepper flakes
1 tblspn dry mustard
