microwave Italian Hotdish
Mmm...pasta...tvp...peppers...I love you all so much. This is one of my favorite, super-duper quick meals. The great thing about whole-grain pasta is that it doesn't turn into a gloppy mess if you try to microwave it. It's best to boil the pasta and TVP with veggie broth, so the TVP soaks up some flavor. If you're feeling adventerous, try sauteeing the green peppers and onions instead of boiling them with the pasta.Super easy Italian Hotdish
16 oz box of whole grain elbow noodles
1 cup dry TVP
1 green pepper (diced)
1/8 onion (chopped super fine)
Italian seasoning
Olive oil
veggie broth (or water)
Huge microwave-safe bowl
Dump noodles and TVP into bowl. Cover with veggie broth, make sure there's about 2-3 inches between the water and the top of the bowl, to make sure it doesn't over-flow. Microwave on high for 9 minutes. Place green pepper and onion into bowl, and boil for another 3 minutes. Strain mixture. Sprinkle italian seasoning and olive oil to taste.
