I should probably start off by saying that i have NEVER made these nor eaten these before. I’ve made Chicken enchiladas dozens of times, just never got around to making the beef ones. It should also be said that I wasn’t even going to bother posting this, BUT, there is a somewhat funny story behind this so eh…why not.
