One of the newer crazes in dietary curbs as of late is the establishment of a totally gluten-free lifestyle. There are even people who are not gluten intolerant that have started adjusting their eating habits toward eliminating this wheat based protein. Some people are altering their diets after self diagnosing an array of unwanted symptoms, while others have been medically advised to cease all gluten consumption due to a serious autoimmune illness called celiac disease. Though celiac disease only affects approximately 1% of the human population, it is estimated that approximately 3 million people are afflicted by adverse symptoms of general gluten intolerance. Gluten ... Read Full Story

“ Since increasing daily consumption of dairy can be an effective strategy for ensuring adequate intake of shortfall nutrients (such as calcium, magnesium and potassium), those who do experience symptoms of lactose intolerance should know there are several practical solutions that can allow for consumption of milk and milk products. In fact, according to a recent study in the Journal of Sensory Studies, adults who identified themselves as lactose intolerant reported a higher liking of lactose-free cow’s milk compared to non-dairy, soy-based substitute beverage. “Those with lactose intolerance are often relieved to know they can still enjoy the great taste and health benefits of ... Wheat allergy refers to adverse reactions involving immunoglobulin E (IgE) antibodies to one or more proteins found in wheat.

There are four groups of proteins which can cause these allergies; Triticeae glutens:

* albumin
* globulin
* prolamin, notably gliadin
* glutelin, notably glutenin which is a protein involved in the creation of gluten

The majority of wheat allergies involve albumin and globulin. Allergic reactions to gliadin and gluten are more rare. Gluten allergy is often confused with Coeliac disease which is an autoimmune disorder, not an allergy.
