Below I have reprinted an article by fellow medical missionary Danny Vierra. It is a very insightful article and provides loads of insight with regard to Celiac Disease or Gluten Intolerance. Danny is also the Creator of the popular Almighty Cleanse that are often shown on television info -commercials . “In 1994 I learned that I had Celiac Disease or Gluten Intolerance. The disease, once known as Malabsorption Syndrome, is an autoimmune disorder that affects nearly one in every hundred people in the United States, of which 97 percent remain undiagnosed and untreated. “ Since increasing daily consumption of dairy can be an effective strategy for ensuring adequate intake of shortfall nutrients (such as calcium, magnesium and potassium), those who do experience symptoms of lactose intolerance should know there are several practical solutions that can allow for consumption of milk and milk products. In fact, according to a recent study in the Journal of Sensory Studies, adults who identified themselves as lactose intolerant reported a higher liking of lactose-free cow’s milk compared to non-dairy, soy-based substitute beverage. “Those with lactose intolerance are often relieved to know they can still enjoy the great taste and health benefits of ... The study, which uses data from a national sample of three ethnic groups, reveals that the overall prevalence rate of self-reported lactose intolerance is 12 percent - with 7.72 percent of European Americans, 10.05 percent of Hispanic Americans and 19.5 percent of African Americans who consider themselves lactose intolerant. Coeliac disease , also spelled celiac disease , is an autoimmune disorder of the small intestine that occurs in genetically predisposed people of all ages from middle infancy. Symptoms include chronic diarrhoea, failure to thrive (in children), and fatigue, but these may be absent and symptoms in all other organ systems have been described. It is estimated to affect about 1% of all Indo-European populations, but is thought to be significantly underdiagnosed. A growing portion of diagnoses are being made in asymptomatic persons as a result of increased screening. Coeliac disease is caused by a reaction to gliadin, a gluten protein found in wheat ... People who suffer from Celiac disease - a type of digestive disorder damaging the small intestine - cannot tolerate Gluten, a protein naturally found in wheat, barley, rye, oats (sometimes), other foods and everyday products such as certain medicines and vitamins. Wheat allergy refers to adverse reactions involving immunoglobulin E (IgE) antibodies to one or more proteins found in wheat.

There are four groups of proteins which can cause these allergies; Triticeae glutens:

* albumin
* globulin
* prolamin, notably gliadin
* glutelin, notably glutenin which is a protein involved in the creation of gluten

The majority of wheat allergies involve albumin and globulin. Allergic reactions to gliadin and gluten are more rare. Gluten allergy is often confused with Coeliac disease which is an autoimmune disorder, not an allergy.
