Although a number of other fruits - such as plum, elderberry and blackcurrant - may also be fermented, grapes are naturally chemically balanced to normally ferment completely without requiring extra sugars, acids, enzymes or other nutrients. Non-grape wines are called fruit wine or country wine. Other products made from starch based materials, such as barley wine, rice wine, are more similar to beers. The English word wine and its equivalents in other languages are protected by law in many jurisdictions.

This has been one fantastic year of enlightenment for me when it comes to all things wine. Believe I may do a year end article on the subject. If I do, I will have to include the German grape, Dornfelder as one of the highlights. Dornfelder is a cross between Helfensteiner and Heroldrebe grapes. A wine auction from the cellar of Paris' famed Tour d'Argent restaurant fetched more than one million euros, surprising organisers who said Tuesday the bids were higher than expected. The famous Left Bank restaurant sold off 18,000 wines and cognacs from its four-century-old cellar to make space for new bottles during the two-day auction. If the real purpose of decanting is to filter out the "crud" from the rest of the wine, why do so many people waste their time decanting bottles of wine that don't have sediment? I think that you should always taste the bottle of wine before decanting or manipulating it in any other way. Only if I feel it will ADD anything to the experience, will I EVER decant my wine.
