This past Friday's weigh-in was not a good one. I weighed in at 227.2 a gain of 4.8 pounds. The trip to Florida wasn't that good to me, when we mapped out our hotel to where the conference, it was supposedly 1.5 miles away. After a week of eating very poorly with a bunch of fatty foods, I thought I was for sure going to gain a couple pounds back. But with working out at least once a day, I was able to only gain 0.2 pounds, so I was very relieved. This next week will be interesting, I am headed to Florida this morning for a work conference, so it should be a lot of eating, but will be walking a few miles each day from the hotel to the conference and back. Spiedini is a Sicilian style grilled skewered meatball recipe that uses fresh pecorino cheese parsley, garlic and pancetta with the meatballs. Here is another post in my Italian adventures. This one is grilled chicken marinated in onions and garlic. This is another great recipe from my Italian grill experience. This is a grilled skewered pork with prosciutto and sage that is simple to prepare, and comes out fabulous! Caponata is a wonderful grilled vegetable salad. This was by far the most fabulous salad I have ever tried and it actually fairly simple to make. The recipes calls for eggplant and red onions (preferably Bermuda) to be grilled and mixed in with an abundance of other vegetables and ingredients.
