Spiedini di Maiale
This is another great recipe from my Italian grill experience. This is a grilled skewered pork with prosciutto and sage that is simple to prepare, and comes out fabulous! The aroma and flavors from the fresh sage and prosciutto adds in some much flavor to the pork.
Ingredients:
- 16 wooden skewers
- 1.75 pounds pork tenderloin, cut into 24 1-inch thick cubes
- 1/2 loaf French or Italian bread, cut into 24 1-inch thick cubes
- 24 1/8-inch-thick squares of sliced prosciutto
- 24 fresh sage leaves
- Olive oil for drizzling
- Salt and pepper to taste
Instructions:
Prepare the grill for high direct grilling. Double skewer all the ingredients, pork, bread, prosciutto, sage, and repeat. You should get 3 pieces of each ingredient on per double skewer. Drizzle each double skewer with olive oil along with some salt and pepper to both sides. Grill the skewers for about 10 minutes per side.
Results:
The results of this were amazing. Like most Italian grill recipes, the ingredients are so simple and the results are fantastic. The aromatic flavor of the sage leaves were brought into the pork very nicely.
