A few years ago I finally tried making soup from Thanksgiving turkey bones. This led to making soup from chicken bones whenever we roasted a chicken. We've been making batches of turkey-or-chicken soup ever since. We boil the bones with chopped onion, carrots, and celery, and have five or six portions of soup for two to put into the freezer and enjoy over a couple of months. Yesterday at the library we hosted an author, Terra Brockman, who came to speak about her extended family's organic farms in Illinois. Her book is The Seasons on Henry's Farm: A Year of Food and Life on a Sustainable Farm and it was a delight to meet her in person, see her slide presentation, and listen to her stories. Back before no-wheat cooking entered my life, one of my favorite recipes from Pillsbury Best Muffins and Quick Breads Cookbook was a pineapple-carrot muffin recipe that used a small can of crushed pineapple, juice and all. We don't eat muffins much any more, but we do like to have cookies to take to work, so I adapted the recipe for Pamela's Baking and Pancake Mix and tried baking it on cookie sheets.
