Tofu-Tater Microwave Casserole5 medium potatos, chopped15 baby carrots1/4 cup chopped onion (optional)12 oz silken tofu1/4 tsp tumeric1 tbsp italian seasoning1 tsp garlic powder1/4 cup soy milk Place potatoes, baby carrots, and onions in a small glass baking dish.
