          <title>Corned Beef Is So Expensive Now</title>
    <description>posted by implsv642&lt;br&gt;&lt;em&gt;&lt;span&gt;I was up and around by 6:30 this morning. And when I stepped outside to go to Starbucks a few hours later, it was like a light was being shined in my eyes. It is sunny outside. And hot. Oh, to live in California where it&amp;#39;s the middle of November and it&amp;#39;s almost 80 degrees. &lt;/span&gt;&lt;/em&gt;&lt;br /&gt;&lt;em&gt;&lt;span&gt;&lt;/span&gt;&lt;/em&gt;&lt;br /&gt;&lt;em&gt;&lt;span&gt;And with it being 80 outside, I step in to Starbucks and you hear Christmas music playing and gingerbread lattes being offered. Really? The holidays are already upon us?&lt;/span&gt;&lt;/em&gt;&lt;br /&gt;&lt;em&gt;&lt;span&gt;&lt;/span&gt;&lt;/em&gt;&lt;em&gt;&lt;span&gt;Then I impulsively decide to go to Costco to get my supply of corned beef. Man, did the price of those things go up or what? It went up hella! From being $6.00+ to $8.79 to a whopping $12.99. &lt;p&gt;Corned beef isn&amp;#8217;t just for St. Patrick&amp;#8217;s Day. In fact in Ireland they don&amp;#8217;t even eat corned beef on St. Patrick&amp;#8217;s Day. That&amp;#8217;s our own Irish American invention. A darn good one though, if you ask me. So the other night I decided to cook one up and, fortunately, there still remained a few leftovers. Perfect for hash on Sunday.&lt;/p&gt;
&lt;p&gt;Sauté potatoes and onions with chunks of corned beef and there you go. Better yet, throw a fried or poached egg on top and your loved one will kiss the tip of your nose in gratitude.&lt;/p&gt;
&lt;p&gt;Really, don&amp;#8217;t wait until March when your Shamrock be-decked supermarket is pushing mounds of corned beef, potatoes, and cabbage. It truly is a wonderful meal any time of year, and also makes for a nice hearty breakfast on the weekend.&lt;/p&gt;
&lt;p&gt;Ahh, there&amp;#8217;s something so satisfying about a fulfilling (and filling) breakfast, a big pot of good English tea, and a few leisurely hours spent enjoying the New York Times.&lt;/p&gt;
&lt;p&gt;Relax and enjoy the simple good things in life.&lt;/p&gt;</description>

&lt;h2&gt;What is corned beef? Why is it called corned beef?&lt;/h2&gt;
&lt;p&gt;Before the wonderful invention we so easily take for granted today called refrigeration, people had to rely on other methods to preserve meats. In the past, they used a method called &amp;#8220;Corning&amp;#8221; which had absolutely nothing to do with corn. Corning got its name because of the corn-sized crystals of salt that were used for dry curing the meat. Today, brines are used to replace the dry corning method. The brine used for corned beef is typically a liquid mixture made up of water, salt, sugar and spices. The ingredients are brought to a boil and then allowed to cool. The beef brisket is then placed in the brining liquid and refrigerated for a number of days, depending on how thick the brisket is.&lt;/p&gt;
&lt;h2&gt;How Long Do You Cook Corned Beef?&lt;/h2&gt;
&lt;p&gt;If you are cooking corned beef the traditional way by simmering it in water, then you should expect a brisket of about 4 pounds, to be done in roughly 3 hours. You can test doneness by piercing the center of the corned beef brisket with a fork. It should penetrate easily.&lt;/p&gt;

It was the British who called it corned beef because the size of the salt granule happened to be the size of a wheat kernel, which the Brits called corn. I had corned beef sauteed with onion and garlic and a plate of rice for breakfast. My baby Noah had waffle topped with butter and strawberry jam, and also a banana. For lunch, I had the left-over corned beef again, while Noah had Chicken Cordon Bleu. mmmm...What a delectable dinner for Noah! :) For our afternoon snack, I had bread, but with corned beef filling. Noah had peanut butter sandwich. Well, do you still want to know what I ate for dinner? Your guess is right! Corned beef again, but this time with egg. hehehe! I just hope baby Kaiden won&amp;#39;t come out of my tummy crying &amp;quot;moo&amp;quot; like a cow. :)</description>
